So there I was making apple cheddar muffins on a whim, when Avery out-whims me and makes potato chip muffins. I kid you not. They were cheddar muffins like mine, but with cheesy potato chips instead of apples. ...They were actually pretty tasty :)
Avery and I had to do a fair amount of talking about baking as chemistry in order to accomplish them but they worked.
Basically we used the simple white muffin recipe, added shredded cheddar cheese and crumbled Lays potato chips (cheddar and sour cream flavor) as well as enough extra milk to keep them moist, and then topped them with more crumbled chips.
They were pretty salty, but really had that 'chip' flavor that Avery wanted.
